Comparing the mechanical properties of the "30X" grades of stainless and 1018 cold rolled steel, the percent of elongation at yield is comparable at around 35%-45% so it wouldn't appear to be any more brittle than the cold rolled. I'd use the correct grade of stainless without hesitation. Polished, of course!Stainless is very strong correct. But it is very brittle so not a great idea since it will snap instead of bending. U would not want that to happen. Especially in the front.
