You got it right. You have to grind the ramps on the cam so that you can have controlable braking. Done it on lots of sportsters. Just match the ramp on the stock side, and you will be good to go.

Can't help you with the jetting, at 8000 feet of altitude. We are at 0 here, so my info would be 8000 feet off. I am sure that someone on here has more experience at 8K than I do.
