If you go with aluminum, just buy some decent workable alloy and have at it. 5052 or 3000 series annealed for example.
That looks like a nice little bike and deserves better than parts intentionally...

What Big Dawg said above. I found that to be a big help on a stroker motor. I even made a knob for my idle screw so I could give it half a turn, fire the bike, then dial it back.

There are extended kits out there, JP Cycle sells one. I'd get the willies evey time I kicked the bike on the stand unless a homemade solution was real brick shithouse construction.

I did the drill & tap thing, worked very well.
Just use Loctite, or better yet drilled socket caps so you can safety wire them.
